Pumpkin Chocolate Chip Cookies

Makes 24 cookies
Ingredients:
1 egg
1/2 cup sugar-free sweetener (Lakanto™, monfruit sweetener, erythritol, Swerve™)
1/4 cup melted butter or ghee, cooled (I can usually use the ghee without melting it first)
1 teaspoon vanilla
3/4 cup pumpkin puree
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 1/4 cup blanched almond flour
1/4 cup coconut flour
1/8 cup arrowroot flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (or more) sugar-free chocolate chips (I like Lily’s or Believe)
Directions:
- Preheat oven to 350ºF
- Line 2 cookie sheets with parchment paper or silicone sheet
- Mix together egg, sweetener, pumpkin, butter, vanilla, pumpkin spice and cinnamon
- In a separate bowl, mix together the remaining dry ingredients, except for chocolate chips
- Add dry ingredients to wet ingredients and mix well.
- Add chocolate chips
- Place about 1 tablespoon of dough onto cookie sheet and press down slightly
- Bake for about 22 minutes until you see some color on the cookies
- Place cookies on cooling rack and let cook before enjoying!]
