Peanut Butter Cookies

Makes 12-16 cookies
Ingredients:
1 cup organic peanut butter
1 large egg
3 tablespoons monk fruit sweetener (or to taste. I usually do 3 heaping tablespoons.)
1 teaspoon vanilla
Generous pinch of salt if using unsalted peanut butter
Directions:
- Lightly beat egg, sweetener, and vanilla
- Add peanut butter and mix well by hand
- Roll dough into 1/2″ balls and place on baking sheet with parchment paper
- Press each ball with the back of a fork in a plus pattern
- Bake at 350ºF for 12 minutes or until golden
- Let cool for a few minutes before placing on cooling rack or they will fall apart when you move them
- Cookies taste best when they are completely cool
Chocolate chips are a nice addition if you like them. Add as many as you like! I use Lilly’s brand that are sweetened with stevia.
