Zucchini or Carrot Mini Muffins

Makes about 20 mini muffins
Ingredients:
1/3 C. + 1 TBSP of avocado oil or melted coconut oil
2 eggs
3 TBSP Lakanto or Swerve sweetener (add another tablespoon for a sweeter muffin)
1 C. Shredded carrot or zucchini
1 C. Mac-n-Mo’s baking mix (order from www.macnmos.com)
1/2 TSP baking soda
1/4 TSP salt
Directions:
- Preheat oven to 350° F
- Grease mini muffin pan with oil
- Mix together oil, eggs and sweetener in medium bowl
- Add remaining ingredients and mix until combined
- Drop about a tablespoon of the mixture into each muffin spot
- Bake for 15 minutes, or until lightly golden brown
- Carefully remove each muffin from pan
