Lemon Bars (low-carb)

Makes 16 bars
Crust Ingredients:
1 1/2 cups. blanched almond flour*
4 Tbsp melted butter
1/3 cup Lakanto or Swerve (or sweetener of choice)
2 tsp vanilla extract
Pinch of salt
*For a thinner crust, you can use 1 cup of almond flour and 2 Tbsp of butter. Personally I like the thicker, shortbread cookie like crust.
Filling Ingredients:
1/2 cup (4 ounces) butter, melted
1/4 cup Lakanto (or sweetener of choice)
1/2 cup fresh squeezed lemon juice
2 Tbsp lemon zest
6 egg yolks
1 tsp xanthan gum
Directions:
- Preheat oven to 350°F
- Combine crust ingredients and press into 8″ x 8″ pan lined and greased with parchment paper
- Bake crust for 15 minutes or until lightly golden
- While crust is baking, melt half cup butter in small saucepan on low heat
- Remove from heat and whisk in sweetener, lemon juice and zest until sweetener is dissolved
- Add egg yolks to mixture one at a time and whisk to combine
- Return mixture to stove on low heat and stir constantly for a couple minutes
- sprinkle xantham gum in mixture and whisk until incorporated and thickened
- Poor mixture into crust
- Bake for 15-20 minutes until firm.
- Cool thoroughly before cutting into squares
- Optional, sprinkle with powdered Lakanto
