Keto Ice Cream

Serves 2
Ingredients:
1 C. heavy whipping cream
1-2 tablespoons cacao (or unsweetened cocoa) powder, depends how chocolatey you like it
1 tablespoon Lakanto™ or Swerve™ (erythritol sweetener), or to taste
a few drops of liquid stevia to taste (I like the combo of the two sweeteners, but you can sweeten how you like)
1 teaspoon vanilla extract
Optional ingredients: sugar-free semi-sweet chocolate mini chips, cinnamon, peanut butter or any nut butter, chopped nuts. Use your imagination! Just on’t add items that aren’t keto.
Directions:
- Add ingredients to pint size Mason jar and tighten lid.
- Shake vigorously for 3-5 minutes
- Check flavor after a minute or so and adjust if necessary
- Freeze for at least 4 hours, then enjoy!
