Healthy Holiday Baking

The weather is getting cooler, fall is here, and holiday baking is not far off. I’ve already been experimenting with some new ideas and tweaking old recipes. The holidays can either be the beginning of some winter weight gain or the start of some new habits. How about ditching the sugar and refined grains and try some healthy alternatives?
Pumpkin Bars, Low Carb
Almost everyone loves pumpkin! I am still trying to make the perfect pumpkin pie, but what I have perfected are pumpkin bars and pumpkin brownies. I have changed the original recipe so many times that it is now truly my own! Add chocolate chips and the bars magically turn into brownies! These bars are so easy to make and my tweaks have make them easier and lower carb. If you’ve made them in the past, I’ve omitted the banana and maple syrup and replaced with extra pumpkin puree and monk fruit sweetener. Click here for the new and improved recipe!
Keto Peanut Butter Cookies
These cookies are my new favorites! They are so quick and easy to make and don’t require any special equipment, Thankfully Costco carries organic creamy natural peanut butter in a two-pack so I can make them fairly inexpensively. Do not use the shelf stable kind of peanut butter. I don’t want to call out any brands, but they are the ones that you don’t have to refrigerate or stir. They contain inflammatory hydrogenated and partially-hydrogenated oils and sugar. Click here for the healthiest peanut butter cookies you will ever have!
Maple Pecan Cheesecake
Who doesn’t love cheesecake? For years I was off cow’s dairy, but now that I can tolerate it again cheesecake is one of my favorite desserts! This recipe accidentally came out really good! It has the right amount of maple and sweetness without using any refined sugar. I have also experimented with a maple-bacon toffee topping, but I haven’t perfected it. I’ll keep you posted when I do!
